White Ginger Cupcakes
“Happiness is only one cupcake away.”

Sweet with a little taste of spice, these cupcakes are great for the fall, and for the holidays. Add some maple frosting and these cupcakes will remind you of sweet times. I present to you White Ginger Cupcakes.


Yields 12 cupcakes.
Recipe for White Ginger Cupcakes
Ingredients for cupcakes
1 ¼ cups of flour
1 and ½ teaspoons baking powder
¼ teaspoon salt
1 and ½ teaspoon of ground ginger
¼ cup of butter
½ and ⅓ cups of sugar
3 egg whites
1 and ¼ teaspoon of vanilla extract
½ and ⅛ of milk
¼ cup of crystallized ginger, chopped into bite-sized pieces
Steps
Preheat oven to 350 degrees F. Place cupcake liners in 12 regular-sized muffin cups.
In a medium bowl, mix flour baking powder, ground ginger, and salt; set aside
In a large bowl, beat butter with an electric mixer on medium speed for 30 seconds. Gradually add sugar, beating well after each addition.
Beat 2 minutes longer, then egg whites one at a time. Once egg whites are well incorporated, beat in vanilla.
Add flour mixture on low speed a little at a time, alternating with milk. After all flour and milk are combined stir in crystallized ginger.
Divide batter evenly in the muffin cups.
Bake for 18-20 minutes. Wait until cupcakes are completely cooled before decorating.

6 cups of powdered sugar
⅔ cups of butter
½ cups of maple syrup
